After the fish has been washed and prepared, the conger eels, full of strategically placed openings, are left to dry and cure in the wind, often at the mercy of the weather. While Christianization took place in these lands, the set of stones were of great importance for the monks of the Monastery of Moraime. Donated by Pope Innocent III to the monastery of Carracedo, this temple was built around 1203 following a mainly Romanesque architectural style.
